Le Cordon Bleu London school was basically a section in the french journal written by the French journalist, Marthe Distel, and was then called “La Cuisinière Cordon Bleu”, which had the most unique recipe collection and soon became the most popular magazine in January 1895. “La Cuisinière Cordon Bleu” magazine’s popularity got bigger and bigger to the point of establishing a small Parisian cookery school in October 1895.
The small Parisian cookery school was joined by students from all over the world, including Rosemary Hume and Dione Lucas, who imported Le Cordon Bleu tradition to London, and started their new school and called “L’Ecole du Petit Cordon Bleu”. In 1935, Hume and Lucas rent a vacant tea shop and turned it into a restaurant, which was their first restaurant, called “Au Petit Cordon Bleu”. However, the school was suspended in 1939 due to the Second World War, but the restaurant remained open.
Following the war, the school was relaunched in 1945, but this time in partnership with the influential flower arranger Constance Spry. The school’s success was confirmed in 1953 when it was asked to prepare the Coronation Luncheon for Queen Elizabeth II, for which Rosemary Hume created the recipe “Coronation Chicken”, widely known nowadays. In 2017, Le Cordon Bleu London and Birkbeck University partnered up to provide a unique Bachelor of Business Administration in Culinary Industry Management. On top of that, Birkbeck, the University of London, and Le Cordon Bleu London began the Master of Sciences in Culinary Innovation Management in October 2020.
